Green TEA & Pitaya Jalapeno Margarita

Third tea drink from Rhonda Withers @the_margarita_mum and another classic.  While red dragon fruit is mainly regarded as an Asian fruit, it originates from South America and is called PITAYA.

Start by making Dragonfruit and Jalapeño syrup:

  • 1/2 Jalapeño
  • 1 cup pink frozen dragonfruit
  • 1 Cup Water
  • 1 Cup Caster Sugar

(Add all ingredients to a saucepan. Bring to the boil. Reduce to a simmer until liquid approximately halves.

For the Margarita

  1. 45ml Reposado Tequila 15ml Orange Liqueur
  2. 30ml Lime Juice
  3. 15ml Dragonfruit and Jalapeño Syrup (or to taste)
  4. 60ml Australian Green Tea & Pitaya

Instructions

  • Add Tequila, orange liqueur , lime juice and syrup to your cocktail shaker.
  • Add Ice and Shake Vigorously until combined.
  • Add Australian Green Tea & Pitaya and stir.
  • Fill glass with ice.
  • Double strain the cocktail glass.
  • Garnish with Fresh Figs and 1/2 Jalapeño
