What the Experts Say: Tea in Cocktails & Mocktails

We connected with award-winning Canadian bartender Evelyn Chick to discuss how to elevate tea into non-alcoholic serves. Her insights on using tea as a lengthener, creating concentrates, and understanding the ingredient have shaped how mixologists approach tea in drinks.

Quote:"Tea is a great way to add complexity to a non-alcoholic cocktail. The diversity of aromas and tastes that can be drawn from tea leaves make it an incredible ingredient when it comes to mixology." — Evelyn Chick, Award-Winning Bartender

Evelyn's Top 5 Tips for Using Tea in Drinks:

Choose a tea you like – Start with familiarity. If you don't like black tea, try green or white instead.

Don't oversteep the tea – Oversteeped tea becomes bitter with excess tannins. Follow recommended brewing times.

Refer to supplier instructions – Tea makers know their product best. Trust their guidance.

Increase quantity to make a concentrate – Brew tea as recommended, then reduce it to strengthen flavour without altering the intended taste profile.

Use tea as a lengthener – Think of tea like you would soda or tonic water. It adds another dimension of flavour while lengthening the drink.

Questions? We've Got Answers.

How is it sugar-free if it tastes sweet?
Great question. Premium tea leaves naturally contain compounds that provide subtle sweetness without sugar. Our slow cold brew process extracts these naturally sweet notes while leaving bitter compounds behind. No added sweeteners needed—just patience and good tea for a CLEAN & CRISP taste.

What about artificial sweeteners?
None. Zero. Zilch. We don't use stevia, erythritol, aspartame, sucralose, or any other sweeteners. What you taste is 100% from the tea itself.

What's this nitrogen infusion about?
Nitrogen infusion is the same technology used in craft beers like Guinness. We infuse each can with tiny nitrogen bubbles that create a smooth, creamy, velvety texture. It's what makes East Forged feel luxurious without adding any calories, sugar, or cream. Plus, the cascading effect when you pour it looks really cool.

How do you keep the calories and sugar so low?
By not adding anything unnecessary. Most beverages are loaded with added sugars, sweeteners, or other ingredients. We just use premium tea, dash of pure juice and nitrogen. That's it. The natural tea provides all the flavour we need.

Does it actually work for energy?
Yes. Natural caffeine from tea leaves combines with the natural L-theanine (found exclusively in tea) provides smooth, sustained energy without the spike and crash of synthetic caffeine in energy drinks. Our customers report better focus, no jitters, and consistent energy for 3-4 hours.

Where do you deliver?
Australia-wide!
Free shipping on all orders, always.

How much caffeine does it have?
Av 29mg per can—roughly equivalent to half a cup of espresso coffee. Enough to energise without the jitters. Natural caffeine and L-theanine from tea leaves releases more slowly, giving you sustained energy without the crash.

Is it suitable for?
✓ Vegan ✓ Gluten-free ingredients ✓ Keto-friendly ✓ Paleo-friendly ✓ Sugar-free ✓ Low-calorie
✓Diabetic-friendly (but check with your doctor)
Basically, unless your diet prohibits tea and caffeine, you're good.
